Salad Ingredients
4 oz. chopped kale
4 oz. chopped cabbage
½ C candied pecans (walnuts or hazelnuts will also work)
½ C pomegranate arils
½ red onion, diced
½ C blue cheese, crumbled
Add all ingredients into a large bowl and mix together.
Vinaigrette Ingredients
3 tbsp olive oil
2 tbsp orange juice
1 tsp orange zest
1 tbsp dijon mustard
1 tbsp maple syrup
Salt and pepper to taste
In a separate bowl combine all ingredients and whisk together. Pour over salad, gently toss, and serve!
